Rävala Nordic Sweet Vermouth

Rävala Nordic Sweet Vermouth is a sweet, apple wine–based vermouth from Estonia, inspired by the ancient county of Rävala. Made with local apples, it balances richness and sharpness while reflecting the Nordic motto Festina lente—"hasten slowly." Infused with 22 ingredients, including Estonian cornflower, wormwood, roots, and barks, as well as exotic spices like anise and coriander, it captures the character of the Baltic landscape. Unlike most vermouths, it is not fortified with strong spirits, allowing its natural flavors to shine.

A traditional cherry craft infusion rooted in Eastern European nalivka heritage. Ripe sour cherries, slow-macerated and left to open up over time, yield a spirit that is vivid, fruit-forward and warmly bittersweet. The old ways, done right.

The Seven Points

We set up shop in a former Soviet-era machine workshop — high ceilings, exposed ironwork, cracked tile walls bearing the memory of a hundred working years. We kept it all.

Seven Points is not a concept, it's a discipline. Seven principles guide every batch we make: Precision. Patience. Provenance. Process. Passion. Purity. Place. If a decision doesn't honour all seven, we don't make it.

From the botanicals we source each season, to the water drawn from our own well, to the cherries pressed by hand — this is drinks-making as a craft and a conviction.

From Workshop to Bottle

Seasonal botanicals, heritage ingredients, hand-selected with purpose.

Open-vessel fermentation, wild and cultivated yeasts, no shortcuts.

Distil

Copper pot stills, single distillation, heads and tails cut by hand and by taste.

Mature

Oak, clay or glass. Time is the only ingredient we can't rush.

Hand-labelled, batch-numbered, wax-sealed. Every bottle a document.
